Split Pea Soup

Ingredients

  • 16 oz pkg (2 c) dry split peas
  • 12 c water
  • 2 chicken flavor bouillon cubes (or 2 tsp instant bouillon)
  • 1 c finely chopped onions
  • ½ tsp garlic powder
  • ½ tsp oregano leaves
  • ¼–½ c pepper
  • 1 lb ham shank
  • 1 bay leaf
  • 1 ½ c thinly sliced carrots
  • 1 c chopped celery

Directions

  1. Wash and sort peas.
  2. In 5-quart Dutch oven, combine peas, water, bouillon cubes, onions, garlic, oregano, pepper, ham shank, and bay leaf; bring to a boil.
  3. Reduce heat and simmer 1 ½ hours.
  4. Remove meat from bone; cut into bite-size pieces.
  5. Return meat to soup.
  6. Stir in carrots and celery.
  7. Simmer an addition 1 ½–2 hours or until soup reaches desired thickness.
  8. Remove bay leaf.

Makes 6 servings.
