Pumpkin Bars
Ingredients
Bars
- 4 eggs
- 2 c sugar
- 1 c oil
- 1 can (15 oz) pumpkin
- 2 c flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp salt
- 1 tsp baking soda
- ½ tsp nutmeg
- ½ tsp cloves
Cream Cheese Frosting
- ½ c unsalted butter, softened at room temp
- 8 oz cream cheese, softened at room temp
- 1 tsp vanilla extract
- 4 c powdered sugar
Directions
For the Bars
- Mix well: eggs, sugar, and oil
- Add pumpkin
- Mix in: flour, baking powder, cinnamon, salt, baking soda, nutmeg, and cloves
- Pour into greased jelly roll pan
- Bake at 350 ℉ for 23–25 min
For the Frosting
- Beat butter 2–3 minutes, then add cream cheese & extract
- Beat in powdered sugar on low, 1 cup at a time. Scrape bowl.
- Beat at medium/high speed for 2–3 min
- Frost cooled bars
