Pumpkin Bars

Ingredients

Bars

  • 4 eggs
  • 2 c sugar
  • 1 c oil
  • 1 can (15 oz) pumpkin
  • 2 c flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • ½ tsp nutmeg
  • ½ tsp cloves

Cream Cheese Frosting

  • ½ c unsalted butter, softened at room temp
  • 8 oz cream cheese, softened at room temp
  • 1 tsp vanilla extract
  • 4 c powdered sugar

Directions

For the Bars

  1. Mix well: eggs, sugar, and oil
  2. Add pumpkin
  3. Mix in: flour, baking powder, cinnamon, salt, baking soda, nutmeg, and cloves
  4. Pour into greased jelly roll pan
  5. Bake at 350 ℉ for 23–25 min

For the Frosting

  1. Beat butter 2–3 minutes, then add cream cheese & extract
  2. Beat in powdered sugar on low, 1 cup at a time. Scrape bowl.
  3. Beat at medium/high speed for 2–3 min
  4. Frost cooled bars

Serves: A lot!
