Overnight Cinnamon Rolls

Ingredients

Dough

  • 1 pkg yeast
  • 1 c hot water
  • 1 tbsp sugar
  • 1 c shortening
  • 1 tbsp salt
  • 2 c sugar
  • 3 eggs
  • 16–18 c flour
  • 4 c warm water

Cinnamon-Sugar Mixture

Best ratio is 4-1:

  • 1 c sugar
  • ¼ c cinnamon

Frosting

  • 1 2-lb bag of powdered sugar (≈7 c)
  • 1 stick of butter
  • 1 tbsp vanilla
  • ⅓ c milk

Directions

  1. Dissolve yeast in 1 c hot water and tbsp sugar. Let stand for 10 minutes.
  2. Mix: shortening, salt, sugar, and eggs.
  3. Add: 8 c flour and 4 c warm water, then add yeast mixture.
  4. Remove ½ of dough from mixer (about 5 ½ c). Add 4–5 c flour to remaining dough.
  5. With dough hook, knead until forms a nice ball. Repeat with remaining dough.
  6. Let rise 4–6 hours.
  7. Roll into large rectangle and sprinkle with cinnamon & sugar mixture after you spread it with butter.
  8. Roll into long tube and slice into 1" thick rolls.
  9. Place on jelly roll pan, cover with tea towels and let rise overnight.
  10. Bake at 350℉ for 17–22 minutes.
  11. Cool and frost.
