Fluff 'n' Blueberries

Ingredients

Base:

  • 2 c graham crackers crumbs
  • ½ c melted butter

Blueberries:

  • ½ c sugar
  • 3 c fresh or frozen blueberries
  • ¼ c cornstarch
  • ½ c water

Fluff:

  • 2 (8 oz) pkg. softened cream cheese
  • 1 ½ c sugar
  • 2 tsp vanilla
  • 1 c whipping cream

Directions

  1. Prepare the blueberries

    1. Add sugar and cornstarch into a saucepan; stir together.
    2. Add blueberries and water. Cook and stir until thickened and bubbly. Remove from heat; cover. Set aside to cool.
  2. Prepare the base

    1. Combine graham cracker crumbs and melted butter. Set aside ½ c Press remaining into a 13 x 9 inch pan.
  3. Prepare the fluff

    1. Whip whipping cream; set aside.
    2. Beat cream cheese, sugar, and vanilla until smooth. Gently fold in whipped cream.
  4. Assemble

    1. Spoon half of the fluff mixture over crust, then add the blueberries.
    2. Add the remaining fluff mixture and sprinkle reserved graham cracker crumbs.
    3. Cover and chill for 2–24 hours before serving.
