Chicken & Wild Rice Soup
Ingredients
- ¾ c butter, separated
- 1 c flour
- 2 c celery, chopped
- 2 c carrots, chopped
- ½ c onion, chopped
- 4 c chicken broth
- 2 c chicken, cooked and shredded
- 1 c heavy whipping cream
Directions
- Combine rice with 2 c of water. Bring to boil and simmer for 45 minutes.
- Melt ½ c butter (reserve other ¼ c for later step), stir in flour. Cook over low hear 8 minutes stirring frequently.1
- Cook celery, carrots, and onions in ¼ c butter till tender but not brown.
- Stir in chicken broth and water. Bring to a boil, then reduce to a simmer.
- Stir in flour mixture1 and simmer for 20 minutes.
- Stir in wild rice, chicken, and cream. Season to taste with salt and pepper.
