Chicken & Wild Rice Soup

Ingredients

  • ¾ c butter, separated
  • 1 c flour
  • 2 c celery, chopped
  • 2 c carrots, chopped
  • ½ c onion, chopped
  • 4 c chicken broth
  • 2 c chicken, cooked and shredded
  • 1 c heavy whipping cream

Directions

  1. Combine rice with 2 c of water. Bring to boil and simmer for 45 minutes.
  2. Melt ½ c butter (reserve other ¼ c for later step), stir in flour. Cook over low hear 8 minutes stirring frequently.1
  3. Cook celery, carrots, and onions in ¼ c butter till tender but not brown.
  4. Stir in chicken broth and water. Bring to a boil, then reduce to a simmer.
  5. Stir in flour mixture1 and simmer for 20 minutes.
  6. Stir in wild rice, chicken, and cream. Season to taste with salt and pepper.

Serves 8
